Cucumber-Mango Salsa…

So…I actually got to spend Father’s Day with my father, what a concept! Its been probably 10 years so belive me I was ready to make it the best one I could. Not only did he get to go fishing 3 times over the weekend (with 52 fish in one day), but we also got to experience some wonderful new restaurants in Livermore, CA. Father’s Day morning we headed into town to try out a new restaurant. El Sacromonte has authentic mexican food and some of the BEST ceviche I have ever had. The bad thing about finding a favorite meal in town, is that I am FAR away from town. So, I have decided to replicate as much of this wonderful dish as I could. Not having fresh fish, I decided to make a mango-cucumber salsa instead of a ceviche. Here is the recipe…

Cucumber-Mango Salsa:

2 Cucumbers seeded, peeled and cubed (about 1/4-1/2 in)
2 Mangos peeled and cubed (about 1/4-1/2 in)
1 Cu of cilantro chopped
1/3 Cu of onion finely chopped
2 Serrano Chiles finely chopped (depending on the heat you desire)
The juice and zest of two limes

The Dressing:
Mix about 1/2 cup of vinegar and 4 T of sugar depending on the sweetness and tartness you enjoy.

Put all the ingredients in a jar and let it chill for about an hour.

You can serve this salsa with pork, seafood, salad or with chips.   I think this may be my new favorite and is a great way to finish a long day of fishing in the sun!  Let me know what you think…
